Digestive biscuits | 250 g |
Butter | 150 g |
Lemons - zest and juice | 6 |
Condensed milk - sweetened | 400 g |
Cream - double | 3.5 dl |
Instructions
- In a plastic bag crush the biscuits with a rolling pin.
- In a pan gently melt the butter.
- Add the crushed biscuits to the melted butter and mix till combined.
- Cover the base of a 26 cm pie dish or loose bottomed tin with the biscuit mixture and press it firmly down with the back of a spoon.
- Chill the base in the fridge.
- Zest 2 lemons into a bowl.
- Squeeze the the lemons (about 1.25 dl) and pour the lemon juice through a sieve into the bowl.
- Add the condensed milk into the bowl and mix till combined.
- Whip the cream till it is stiff and then fold it into the lemon mixture.
- Pour the lemon mixture onto the base and let it chill for at least 3 hours.
