Fake Lemon Cheesecake

Ingredients

Digestive biscuits250 g
Butter150 g
Lemons - zest and juice6
Condensed milk - sweetened400 g
Cream - double3.5 dl

Instructions

  1. In a plastic bag crush the biscuits with a rolling pin.
  2. In a pan gently melt the butter.
  3. Add the crushed biscuits to the melted butter and mix till combined.
  4. Cover the base of a 26 cm pie dish or loose bottomed tin with the biscuit mixture and press it firmly down with the back of a spoon.
  5. Chill the base in the fridge.
  6. Zest 2 lemons into a bowl.
  7. Squeeze the the lemons (about 1.25 dl) and pour the lemon juice through a sieve into the bowl.
  8. Add the condensed milk into the bowl and mix till combined.
  9. Whip the cream till it is stiff and then fold it into the lemon mixture.
  10. Pour the lemon mixture onto the base and let it chill for at least 3 hours.
