Onion | 1 |
Garlic cloves - chopped | 1 |
Risotto rice | 1 cup |
White wine | 125 ml |
Water - boiled | 5 dl |
Vegetable stock | 1 tsp |
Instructions
- Finely chop the onion and garlic.
- Add the garlic and onion to a pan and cook till the onion is translucent.
- Add the white wine and risotto and stir.
- Dissolve the stock in the boiling water and pour over the risotto.
- Leave it all on a low simmer till cooked whilst stirring it every few minutes.
Tips
- Add 150 g of prawns per person towards the end of the cooking time.
- Cook about 150 g of scallops per person to go with it.
- Add smoked salmon on top.
- Add 1 leak cut into strips at the halfway mark.
- Add 1 tbsp of crème fraîche at the end to make it creamier.
