White Wine Risotto

Ingredients

Onion1
Garlic cloves - chopped1
Risotto rice1 cup
White wine125 ml
Water - boiled5 dl
Vegetable stock1 tsp

Instructions

  1. Finely chop the onion and garlic.
  2. Add the garlic and onion to a pan and cook till the onion is translucent.
  3. Add the white wine and risotto and stir.
  4. Dissolve the stock in the boiling water and pour over the risotto.
  5. Leave it all on a low simmer till cooked whilst stirring it every few minutes.

Tips

  • Add 150 g of prawns per person towards the end of the cooking time.
  • Cook about 150 g of scallops per person to go with it.
  • Add smoked salmon on top.
  • Add 1 leak cut into strips at the halfway mark.
  • Add 1 tbsp of crème fraîche at the end to make it creamier.
